Sweet, fragrant, and incredibly refreshing, Yellow Canary melons are known for their bright yellow rind and juicy pale flesh. This traditional-style Agua Fresca highlights the melon’s naturally sweet flavor, creating a light and refreshing drink that's perfect for warm summer days.

- 6 cups Yellow Canary melon, cubed
- 3 cups cold water
- 2 tablespoons fresh lime juice
- 1–2 tablespoons honey or sugar (optional)
- Ice for serving
Directions
- Prepare the Melon

Remove the rind and cut the flesh into cubes. - Blend
Place the melon, water, and lime juice in a blender.
Blend until completely smooth. - Taste and Adjust
Taste the agua fresca and add honey or sugar if desired. A ripe Yellow Canary melon is often sweet enough without additional sweetener.
Blend briefly to combine. - Strain (Optional)
For a smoother drink, pour through a fine-mesh strainer. For a more rustic, fruit-forward beverage, serve unstrained. - Serve
Pour over ice and serve immediately.
Garnish with a lime wedge or fresh mint if desired.
Cook's Notes
- The riper the melon, the sweeter and more flavorful the agua fresca will be.
- Chilling the melon before blending helps create an extra-refreshing drink.
- Adjust the amount of water depending on how thick or light you prefer your agua fresca.
- A splash of sparkling water can be added just before serving for a festive twist.
