1 large cucumber, sliced or diced
-
¼ cup red onion, thinly sliced
-
2 tablespoons fresh lime juice
-
2 tablespoons extra-virgin olive oil
-
2 tablespoons fresh cilantro, chopped
-
½ teaspoon sea salt
-
¼ teaspoon freshly ground black pepper
Directions

Wash and core the Primo Red tomatoes. Cut into large wedges or bite-sized chunks.
Slice or dice the cucumber and thinly slice the red onion.

In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Assemble the Salad
Place the tomatoes, cucumber, onion, and cilantro in a large serving bowl.
Pour the dressing over the vegetables and gently toss until evenly coated.
- Rest and Serve
Allow the salad to sit for 10–15 minutes before serving so the tomatoes can release some of their juices and the flavors can meld together.
Serve chilled or at room temperature.
Cook's Notes
- Primo Red tomatoes are the star of this salad, so use fully ripe fruit for the best flavor and texture.
- Additional lime juice may be added based on personal preference.
- For a traditional Mexican touch, add a pinch of Tajín seasoning just before serving.
- Queso Fresco can be sprinkled on top for added richness and flavor.
